Dialect and slang, mostly. (I believe) They can still understand each other quite well, but when they start using regional slang or colloquialisms, then they have trouble understanding each other without explanations. Accents are another factor. There are different accents depending on which region of France you go, and there are different ones in Quebec as well.

If you want a form of French that's really different, try Creole the Haitians speak or Cajun French, which spoken in the countryside around New Orleans.

Quebec French is much more laid back accent wise and not as fast at sometimes, there are also words that are in quebec french but the actual french don't use it. Other than Poutine thats it :P
